It was my sister's birthday yesterday and, as she was turning 18 [let's not get into how old this makes me feel], I decided to go all out cake-wise and make something colossal, in the form of this caramel-encased rainbow cake.
Pretty, right?
I used Lorraine Pascale's recipe for 'graffiti cake' and would happily kiss her feet right now were she here: the sponge turned out light and moist, the icing was deliciously silky and just the right quantity, and the graffiti caramel [though ridiculously fiddly to shape] ended nowhere near as disastrously as I'd imagined.
To make the rainbow effect I just split the sponge mixture into six bowls. Each bowl was then sprinkled with a little food colouring, stirred well and baked in a pre-lined 8 inch tin.
