Fat Fridays...

... hopefully you'll know exactly what I'm talking about when I mention Fat Fridays. If not, well... you need to get on board. When me and my friends were at college we had a lot more time on our hands than we do now. With all those free periods and relatively little work, or rather will to work, we sat around for hours thinking of ways to pass the time. Card games were invented, reinvented and played to death. Songs were sung, strolls around town were taken and sometimes, sometimes, we were actually compelled to get some work out. Eventually though, we came up with the perfect solution to our boredom. Eating.

Every Friday dragged on and this wasted time became the perfect excuse to nip to the local cafe for some hot buttered toast, or to the bakery for delicious iced buns. The only rules were to throw all other rules out the window. And so Fat Friday was born. Whether it was sickly sweet treats or wholesome homemade soup, we always made sure to go out and buy just what we fancied. And boy did it make Fridays worthwhile.

I've decided to continue with the tradition here on the blog, using every Friday as an excuse to share with you some of my favourite recipes. Some will be tried and tested, others will have been spotted on my endless online recipe-trail, but either way be prepared for some drool-worthy treats that will hopefully inspire lots of you to embrace our school-kid tradition.

First up? Oreo Truffles.

Adapted from the wonderful Bakerella, these babies are more than worth a try. Deliciously moist with a soft chocolate shell, they'd make make wonderful party favours or, y'know, an accompaniment to that quiet night in you've got planned.

INGREDIENTS

Blitz the packet of Oreos in a food processor (or bash in a plastic food bag if you're feeling particularly stressed) 'til they look like this...

Yes Oreo's taste wonderful but man do they look like soil when they're crushed (tip for ya there Heston)

Next, add the cream cheese (50g) and mash into the soil Oreo crumbs until it forms a sticky ball (we won't describe what this looks like, but if it's pretty unappealing you've probably got it right).

Then split the truffle into about 12, roll into small balls and place on a lined baking tray.

Pop them into the freezer for about 10-15 minutes; this will make the next step much easier...

...while the truffles are in the freezer break up your chocolate and place into a heat proof bowl. Melt the chocolate using the bain-marie method or just whack it in the microwave. I always use my mum's steamer, putting the boiled water in the bottom layer (obvs) and resting the bowl on the next one up. Simples :)

Remove the truffles from the freezer and plop each one into the melted chocolate, coating it generously.

Then simply place back onto the line baking tray and pop in a cool place to let the chocolate set. I put mine in the utility but you could always use the fridge - just be aware that the sudden cooling might cause the starch in the chocolate to come to the surface, it still tastes fine but might have a few white patches!

And there you have it. I could rave on about how moreish these are, but with a recipe this easy you should go ahead and try it yourself! And just for the record, I won't judge if these don't make it past tonight...Fat Friday or not.
