Oh man. Where do I start?
Perhaps with OMANOM.
These are quite possibly the best cookies I've ever made, and I have to give full credit to PickyPalate from which I adapted the recipe . I harped on a few weeks ago about wanting simple, unpretentious cookies and can safely say I've come full circle to make something undeniably extravagant.
Then again, it'd be difficult to find something simpler than a cookie stuffed with...well, cookie!
I have to admit I imagined bringing these out of the oven with a bountiful flourish, offering them to family and friends as 'normal' cookies, eager to see their reaction upon seeing a deliciously squidgy oreo encased within.
Well....it turns out these cookies ain't the subtlest, and their telling oreo-shaped humps kinda give the game away.
Nevertheless, if you serve these warm with a spoon and a smile you're sure to receive a good reaction. Even if it is just you and the oven tray.
Happy tummies all round.
INGREDIENTS
Pre-heat the oven to 180 C // 350 F // GM 4
Cream the butter in a large bowl to soften, add both of the sugars and beat until thoroughly combined.
Crack the egg into the bowl and beat into the mixture until smooth and glossy.
Now add the flour gradually until a stiff, sticky dough is formed.
Chop up the chocolate into chip-sized chunks and stir through the dough.
And now for the hump-maker. Take a spoon full of dough and scrape onto the top of an oreo, then flip and repeat on the base.
Squash the dough around the biscuit so that it forms a small cookie-patty, and place onto a pre-lined tray ready for baking.
Finally, pop into the oven for 13 minutes [for my non-fan oven this made deliciously gooey, chewy cookies, but cook them to your own taste and/or oven!], turning half way through.
Allow to cool slightly before nomming.
Happy Tummies indeed.
